Butter or ghee?
Ghee is clarified butter — butter with the milk solids removed. That changes more than the name suggests.

Who wins at what
Because it removes the milk solids, ghee is lactose- and casein-free and handles higher heat — good for intolerance and frying. But it’s almost pure fat: a touch more calories per spoon. Both are saturated; use a light hand.
