Instructions

  1. In a heavy-bottomed saucepan, gradually combine the whole milk and cocoa powder, stirring with a silicone spatula over low heat until fully dissolved with no lumps.

  2. Add the condensed milk and butter. Increase to medium-low heat and stir continuously, scraping the bottom and sides of the pan.

  3. Cook for approximately 15 minutes after the mixture begins to boil, stirring constantly, until the fudge pulls cleanly away from the bottom of the pan and holds together as a single mass.

  4. Transfer to a buttered deep plate, spread evenly, and press plastic wrap directly onto the surface to prevent a skin from forming.

  5. Allow to cool completely at room temperature — at least 1 hour. Alternatively, refrigerate for 30 minutes before rolling.

  6. Butter your hands lightly. Using a teaspoon, scoop portions of about 18g and roll each into a smooth ball between your palms.

  7. Spread the cocoa nibs in a shallow dish. Roll each ball in the nibs, pressing gently so they adhere.

  8. Place each brigadeiro in a paper cup and serve at room temperature. Makes about 20 pieces.
